The Tom Brady Banana Bread

I really enjoyed reading this article about Tom Brady’s chef and how he prepares fun meals that are mostly plant based and gluten-free.
The article shows how a family can make smart choices (even without a private chef) that give big results in the playing field. Tom Brady is not following any fads by eating this way, he and his family eat this way because it gives good results.
You do not need to have a private chef to think outside of the box and live a nutritious and fun life. Here is one of my favorites, I think Tom Brady would approve, the gluten-free, vegan banana bread!
-mash 3 ripe bananas
– make two non-eggs: 1 egg=1 tbsp flax meal to 3 tbsp water. Make 2 so that’s 2 tbsp flax meal and 6 tbsp water. Mixing it up and let sit for 3 minutes
-in a bowl combine the bananas and egg replacer and the following:
-1/2 cup potato starch
-1 cup sorghum flour
-2 tsp baking powder
-3/4 tsp xanthan gum
-1/2 tsp baking soda
-1/2 tsp salt
-2 tsp vanilla
– tsp cinnamon
Mix everything together until it’s nice and smooth and then fold in some walnuts or whatever you like. For this one I used walnuts, mini dairy free chocolate chips and some blueberries.
Preheat oven to 350 degrees
Line a loaf pan with parchment paper, spray the sides a bit with organic Pam. Spread the mixture into the pan.
Bake in the oven for 60 minutes at 350 degrees
