Welcome to our first Buddha Bowlz of 2016! This first Buddha Bowl covers all the bases, it is a vegan melange of carrot, quinoa, broccoli, tofu and spinach. The main kitchen gadgets we are using are the Blentec blender and the Breville professional wok. All ingredients are organic. Here goes:
1) make carrot mixture: In the Blentec (or your mixer/chopper of choice) put 1 cup chopped onions, 1 cup chopped carrots, a hand full of walnuts with a drizzle of olive oil and a bit of olive juice. Mix for just a moment to chop it together.
2) cook quinoa: in a small pot put 1 cup water and 2 cups quinoa, a hand full of dulce seaweed, a pinch of oregano and a pinch of basil. When ready turn off heat and add chopped broccoli and mix in with the quinoa. Let cool a few minutes until quinoa is fluffy but not too dry.
3) put it all together in the medium-highly heated Breville wok (or other wok, pot or pan). First put a drop of olive oil in the wok. Throw in the carrot mixture and stir it up for a minute. Put in the tofu, stir 30 seconds and cover for 30 seconds. Put n the quinoa and keep stirring it for one minute. Turn off the heat and put the lid on. Let it sit 2 minutes. Uncover and let cool for just a few minutes.
4) serve em up! Line the Bowlz with baby spinach. Put in some big scoops of your new creation from your wok. Drizzle just a bit of Braggs amminos and flax seed oil and enjoy!
